Champagne Pickled Cucumbers

These fridge pickles are too good to resist! Crisp cucumbers get a flavor boost from Champagne Vinegar, fresh dill, scallions, garlic, peppercorns, and mustard seeds. It's a classic pickle with a fancy twist—perfect for fall picnics or just casual snacking when the weather cools down!

What You’ll  Need:

  • 1 ¼ cups of The Blue Olive French Champagne Premium Vinegar
  • ⅔ cup of granulated sugar 
  • 1 teaspoon kosher salt 
  • 1 teaspoon celery seed
  • ¼ teaspoon of red pepper flakes
  • 2 large thinly sliced fresh cucumbers
  • 1 cup of thinly sliced red onion
  • 4 sprigs of fresh dill 

Directions:

  • Step 1:  Add vinegar, sugar, salt, celery seed and red pepper flakes to a 2-3 quart saucepan over medium heat. Stir vinegar mixture constantly until sugar completely dissolves. Remove the pan from the heat. Allow the vinegar mixture to rest for 10-15 minutes until completely cooled. 
  • Step 2: Alternate layers of the cucumber slices, onion slices, and fresh dill in the quart canning jar. (Slice into spears if you prefer those)
  • Step 3: Once the vinegar brine mixture is cooled, slowly pour over the cucumber and onion. Allow the salad to marinate for 15 minutes before serving.
